Glazed baked ham now an Easter tradition

If it is baked ham you have chosen for the Easter dinner, you will generally find directions on the wrapper of the meat. A 5-pound (bone-in) ham at refrigerator temperature should be roasted at 325 F for 2 1/4 hours. Whole or half hams of 11 pounds should be baked 3 1/4 hours. An 8-pound, boned ham will take 3 hours.

Place the ham, fat side up, in a shallow roasting pan. Use no water and no cover. If you use a thermometer, insert it in the center of the thickest part of the meat without touching the bone. When cooked, remove the skin and score the fat.

Glaze 1 cup brown sugar 2 tablespoons flour 2 teaspoons ground cloves

1/2 cup orange juice

Mix above ingredients and pat onto ham. Return ham to the oven with a 400 F setting for 15 minutes at this temperature. We like to pour 1/2 cup of orange juice over all for glazing.

New to Bangor markets is orange roughy, a lean white fish that is similar to sole and is shipped here frozen from New Zealand. It is boneless, mild in flavor and a pretty white color. Try this tomato and herb sauce with it.

Orange Roughy with Tomatoes and Herbs

1/4 cup chopped onions 1 clove garlic, minced 1 teaspoon margarine

1/2 cup large tomato, seeded, chopped

1/4 teaspoon salt

1/8 teaspoon oregano

1/8 teaspoon thyme Dash of black pepper

1/2 pound orange roughy fish fillets

1/4 cup water 1 1/2 teaspoons tomato paste

Saute onion and garlic over medium heat until soft, about 5 minutes. Stir in tomato and seasonings. Cover; simmer 5 minutes. Place fish in skillet and cover with sauce. Pour in water. Cover and bake 15 to 20 minutes or until fish just flakes with fork. Remove fish to heated platter. Reduce sauce on top of range to 1/3 cup. Stir in tomato paste and pour over fish. Serve with lemon wedges, if desired. Makes 2 servings.

Gold cinnamon squares are a deliciously different alternative to brownies.

Gold Cinnamon Squares 1 1/2 cups all-purpose flour 1 teaspoon ground cinnamon

3/4 teaspoon baking powder

3/4 teaspoon salt

1/8 teaspoon baking soda 3 eggs 1 1/2 cups firmly packed light brown sugar

1/2 cup (1 stick) butter or margarine, melted and cooled 1 teaspoon vanilla extract 1 box (10 ounces) M&Ms Plain chocolate candies

1/2 cup raisins

Preheat oven to 350 F. Grease a 15 1/2 x 10 1/2 jelly roll pan; set aside. In a small bowl, combine flour, cinnamon, baking powder, salt and baking soda; set aside. In a large bowl, beat eggs at high speed on electric mixture for 4 minutes or until thick and fluffy. Gradually beat in sugar. Reduce speed to low and blend in butter and vanilla. Gradually beat in the dry ingredients. Stir in raisins and 1/2 cup M&Ms plain chocolate candies. Spread batter into prepared pans. Bake 15 minutes. Sprinkle remaining candies on top. Bake for additional 8 to 10 minutes until a wooden toothpick inserted in center comes out clean. Cool completely and cut into 2×2-inch squares.

The friend who passed on this recipe to me suggested I use of a sharp knife when slicing the bread.

Coffee Pecan Loaf 2 cups all-purpose flour 2 1/2 teaspoons baking powder

1/2 teaspoons salt

2/3 cup shortening 1 cup sugar 2 tablespoons instant coffee 3 eggs

2/3 cup milk 1 teaspoon vanilla 1 cup finely chopped pecan meats

Sift the flour, baking powder and salt into a bowl. In a second bowl cream the shortening with the sugar and instant powdered coffee. Beat in one egg at a time until light and fluffy. Add finely chopped pecans. Spoon into greased loaf pan (8x5x3-inches). Bake 55 minutes at 350 F oven or until cake tester inserted in the center comes out clean.

Cook these pizza burgers on an outdoor grill over hot coals until browned. They can also be tossed in a frying pan or baked in an oven at 400 F.

Stuffed Pizza Burgers 1 pound ground beef

1/4 cup sweet onions, coarsely chopped

1/4 cup spaghetti sauce 1 teaspoon dried basil 2 ounces Mozzarella cheese, divided into 4 pieces

Divide ground beef into eight pieces. Shape each into a large flat patty. In the center of four of the patties, place 1 heaping tablespoon of chopped onions, 2 teaspoons spaghetti sauce, 1/4 teaspoon basil and 1 piece of Mozzarella cheese. Top these four with the remaining four patties and firmly seal edges. Cook in desired method until browned. Turn and cook until opposite side is browned. Serve hot on hamburger buns or Italian rolls. Serves 4.
