Healthful potato dishes focus of contest at fair

The 1999 Potatoes for the Health of It recipe contest will be August 5 at the Northern Maine Fair.

Cooking contests are long-standing traditions at country fairs, and the Northern Maine Fair is no exception. But six years ago, fair organizers decided they needed to find a new twist to their cooking contests. That’s when they turned to the University of Maine Cooperative Extension for help.

Extension educators Pat Snell and Nancy Bradford-Sisson developed a heart-healthy potato recipe contest that was co-sponsored by the Maine Potato Board and the Northern Maine Fair Board. This contest showcases the Maine potato and demonstrates how easy it is to alter traditional recipes for health.

Last year there were 43 entries in the contest. The Best of Show winner was Mary Haines of Fort Fairfield, who received top honors for her recipe for Potato Strawberry Supreme, a tasty dessert that uses mashed potatoes.
