CALAIS – Erin Allen of Alexander took fourth place in a national wedding cake competition last month in Atlantic City, N.J.

The competition was sponsored by the Retail Bakers Association of America.

Allen, a second-year student at Washington County Technical College, earned her certified journeyman baker’s certification last year.

Her cake was composed of four layers tiered on pedestals, and each was decorated with handmade flowers that took more than 50 hours to create. The cake was made with more than 10 pounds of hand-shaved chocolate.

Allen, who is enrolled in WCTC’s dietary management program, hopes to complete a third year at WCTC to obtain her dietary technician certification.
