Add 4 boneless, skinless chicken breast halves and cook, uncovered, for 6 minutes. remove pan from heat and cover; let stand until chicken is cooked through, about 15 minutes. transfer chicken to a plate and cool 10 minutes. Chop chicken into 1/2-inch pieces. While chicken is cooling, in a large bowl whisk together 3/4 cup mayonnaise, 1 tablespoon curry powder, 1 tablespoon lime juice, 1 teaspoon honey, 1/2 teaspoon ground ginger, 1/2 teaspoon salt and 1/4 teaspoon ground black pepper. Add chicken, 1 chopped red onion, 1 diced ripe mango, 1 cup red seedless grapes and 1/2 cup roasted cashews. Stir gently to combine. Slice 6 soft sandwich rolls and place a lettuce leaf on each.
