It appears the government is finally giving its approval of soy foods to be served in our public schools. Lately there is so much talk and literature on the benefits of eating soy. On the other hand, it is also a fact that most soy beans are genetically modified. Until the safety of modified foods is clearly established, should schoolchildren be used as guinea pigs?

Tofu, also made from soy, can be made into some great burgers at home, but the veggie burgers sold to the public already prepared are loaded with sodium. Too much sodium is harmful for some, especially children who have a tendency to be overweight. Although soy may be an alternative to eating too much animal fat, is genetically modified food a good substitute? Nelson Curtis Bangor
